My wife and I have just moved to Paris. We are here on tourist visas, not working in France (we are self-employed in the USA). I am looking for advice/recommendations regarding health insurance and having a baby in France.

What exactly do you wanna know about having a child in France? You want the manual on how to "make" it?

No. He was asking if their health insurance will cover all the expenses if they will have their baby born in Paris.

No one has any advice? My wife and I are in a very similar situation.

Hey! Excited for your baby! lol! Uhm... since you're still considered a tourist, i believe your health insurance in your own country will cover any medical emergencies you may have in Paris. You just have to ask first though if they will cover it for you. wish you luck with your baby!
