Does anyone know if it is best to book a rental car before getting into Paris to take my trips to Provence or should I wait to get there?
What companies are the most trustworthy?

There is no rush to sign contracts or obligations through correspondence. You can always find a company to rent a car. But don't do it at the airport, they charge big.
